This toast is the best of both worlds! Prep a hard-boiled egg two ways for a visual puzzle that will keep you entertained, just like the curious Gemini who’s always up for an adventure in taste!

Ingredients

for 1 serving

• ½ avocado
• kosher salt, to taste
• 1 teaspoon lemon juice
• 1 slice multigrain toast
• 1 chive
• 1 hard-boiled egg, halved, 1/2 chopped
• black pepper, to taste

Preparation

1. Scoop the avocado into a medium bowl. Season with salt and add the lemon juice. Mash until smooth.
2. Spread the avocado on the slice of toast. Lay the chive diagonally across the toast. Put the chopped egg on one side of the chive and the other half egg on the other side. Season with pepper.
3. Enjoy!
